Chia and coffee pair up to create a heart-friendly dessert.

Makes 4 servings


1 cup Italian brewed coffee

1 cup Coconut milk

1 tsp Vanilla extract

⅓ cup Coconut sugar

¼ tsp Ground cinnamon

6 Tbsps Chia seeds

12 Strawberries, hulled and sliced


  1. In a bowl, combine the coffee, coconut milk, vanilla extract, coconut sugar and cinnamon. Mix well until no lumps remain.
  2. Stir in the chia seeds and store in the refrigerator. After 20 minutes, mix the pudding.
  3. Cover the bowl with plastic wrap. Allow the chia seeds to soak for at least two hours in the refrigerator or overnight.
  4. Transfer the pudding into serving glasses or bowls. Top with strawberries.
