Cheesy Lobster Mac and Cheese with Brown Butter Béchamel Sauce

Lobster Mac and Cheese with Brown Butter Béchamel Sauce

Makes 4-6 servings

½ Tbsp Olive oil

½ Onion, finely chopped

1 clove Garlic

8 Tbsps Butter

⅓ cup All-purpose flour

3 cups Milk

*Salt and ground white pepper, to season

⅛ tsp Grated/ground nutmeg

400g Elbow macaroni, cooked al dente

1 cup Grated parmesan cheese

¾ cup Grated mozzarella cheese

½ cup Panko breadcrumbs

*Salt and pepper, to season

2 pcs Cooked lobster meat, cut into chunks

  1. In a sauté pan, put olive oil and sauté the onions and garlic. Cook until translucent. Add 6 tablespoons of butter and let melt until it reaches a nice light brown color. Add flour and stir for one minute. Add the milk and whisk until it becomes smooth. Bring a boil, then reduce to a simmer and cook until the sauce thickens, for 2-3 minutes. Season with the salt, white pepper and nutmeg.
  2. Remove the pan from the heat and mix the cooked macaroni and cheeses then blend well. Set aside.
  3. In another pan, melt the rest of the butter over low heat. Add breadcrumbs and cook it until golden brown. Be careful not to burn it since it’ll cook really quick. Season with salt and pepper. Set aside.
  4. Portion the mixed pasta with cheese in individual ramekins or a 4-quart Pyrex dish then top with the toasted breadcrumbs, spreading it evenly on top of the pasta.
  5. Put the cooked lobster meat on top of the pasta and bake for 15-20 minutes until golden brown. Let cool for a few minutes before serving.
