You know you’re off to a good start with this make-your-own cereal recipe.

Makes 2 cups


1 Tbsp Olive oil

1 ¼ cups Yellow cornmeal*, divided

2 Tbsps Sugar

½ tsp Salt

1 tsp Vanilla extract

¾ cup + 1-2 tsps Water


*Cornmeal is available in health food stores like Healthy Options. We recommend using fine or medium ground cornmeal for this recipe.



  1. In a bowl, whisk together a cup of cornmeal, sugar, and salt.
  2. Add vanilla extract then pour the water ¼ cup at a time, stirring until batter is smooth, with the consistency of pancake batter.
  3. Line a baking sheet with foil or parchment paper, then grease lightly with olive oil. Pour batter and spread as evenly and thinly as possible. Set aside.
  4. In another bowl, combine remaining ¼ cup cornmeal with 1-2 teaspoons water, until the mixture resembles coarse breadcrumbs. Sprinkle the crumbs over the batter.
  5. Bake batter for 15-20 minutes in a preheated 350°F oven or until the batter is solidified with some cracks.
  6. Remove baking sheet from oven and let cool. Once cool enough to handle, use your hands to further crack the cereal into small flakes.
  7. Return to oven and bake until flakes are toasted and crisp, about 20-25 minutes. Store cereal in an airtight container. Serve with milk and fresh or dried fruits.
