Cook This Amazing Catalan Seafood Soup For The Weekend

Craving for a sumptuous seafood soup that can easily impress anyone in the dining table? Then cook our Catalan seafood soup made with the goodness of fish, shrimp, and mussels. With the special addition of Delimondo Chorizo Bilbao and a pinch of authentic saffron, you’ll get to taste the best of Spain all in one flavorful bowl. Pair it with a side of tapas or pintxos to make a complete Spanish feast.

 

CATALAN SEAFOOD SOUP
Makes 5-6 servings

6 cups Fish stock
Large pinch of saffron threads
2 Tbsps Olive oil
1 White onion, thinly sliced
3 cloves Garlic, minced
1 Long green chili pepper, deseeded, finely chopped
1 tsp McCormick Spanish Paprika
2 pcs Delimondo Chorizo Bilbao, sliced
½ cup White wine
2 Tbsps Tomato paste
¾ kilo Ripe tomatoes, blanched, peeled, deseeded, coarsely chopped
¼ kilo White fish fillet, cut into 1 ½-inch pieces
¼ kilo Tiger prawns, peeled and deveined, with tails kept intact
¼ kilo Fresh mussels, scrubbed clean and debearded
1 Squid, cleaned and cut into 1-inch rings
McCormick Iodized Salt, to season
McCormick Black Pepper Ground, to season
1 Tbsp Lemon juice
Chopped fresh parsley, for garnish

  1. Soak saffron threads in a bowl of warm fish stock for 30 minutes. Set aside.
  2. Pour olive oil in a large pot over medium heat. Sauté onion, garlic, pepper, Spanish paprika, and slices of Delimondo Chorizo Bilbao in olive oil for five minutes.
  3. Pour in the white wine and simmer until the liquid is reduced.
  4. Add tomato paste and cook for another two minutes.
  5. Next, add fresh tomatoes and saffron fish stock. Bring to a boil, cover the pot, then reduce heat to simmer for 8-10 minutes.
  6. Finally, add the fish, prawns, mussels, and squid then simmer until fish and seafood are cooked. Season with salt and black pepper. Just before serving, squeeze lemon juice and sprinkle chopped parsley on the soup. Serve with toasted ciabatta bread.Recipe by Chef Hylton Leroux
