Make Our Fabulous Burrito Bowl For Your Next Midnight Craving

Got a long night ahead of you? Then build this fantastic burrito bowl loaded with your favorite Mexican fixins’ like rice, black beans, ground beef smothered with a special spicy avocado lime sauce. Fod for the long hours shouldn’t just be about instant noodles or microwavables. Try making this burrito bowl and you’ll have yourself a incredibly filling midnight snack to indulge in.



Makes 2-3 servings



1 Large avocado, pitted

3 cloves Garlic, crushed

2 Tbsps Lime juice

2 tsps Hot sauce

Salt and pepper, to season



2 Tbsps Vegetable oil

1 Tbsp Butter

1 Onion, minced

4 cloves Garlic, minced

¼ kilo Ground beef

3 Tbsps Taco seasoning mix

½ cup Store-bought salsa, plus more for serving

½ cup Corn kernels

½ cup Canned black beans

2 ½ cups Cooked rice

4 Tbsps Chopped cilantro

Salt and pepper, to season

Nacho chips, for serving

  1. First, make the Spicy Avocado Lime Sauce. Using a food processor, combine avocado flesh, garlic, lime juice, and hot sauce and process until smooth. Season with salt and pepper. Taste and adjust seasoning with lime juice and/or hot sauce.
  2. Next, make the burrito rice. In a large skillet, heat oil and melt butter over medium heat. Sauté the beef until brown then add taco mix, salsa, corn kernels, and black beans. Cook for another 10 minutes until beans are soft. Add rice and mix well. Season with salt and pepper.
  3. Arrange rice in a bowl then top with Spicy Avocado Lime Sauce and store-bought salsa. Serve nacho chips on the side.
