Build Me Up, Butter Up: Buttery Cornflake Cookies Recipe

Looking for something new to bake? Give cookies an extra crunch and flavor by adding cornflake cereal into the mix. From their beginning as basic butter cookies, these buttery cornflake cookies gain more flavor with a hint of corn in every bite.

 

Buttery Cornflake Cookies
Yields 30 pieces

 

1 cup Butter

1 cup White sugar

1 Whole egg

2 Tbsps Fresh milk

2 ½ cups Sifted all-purpose flour

1 tsp Baking powder

¼ tsp Fine salt

1 ½ cups Cornflakes

 

  1. Preheat the oven to 350F. Line three cookie sheets with foil or baking parchment. Set aside.
  2. Beat the butter until light and fluffy. Add the sugar and continue to beat until combined.
  3. Pour in the egg and the milk. Beat until blended.
  4. Pour in the flour, baking powder, and salt. Beat only until combined. Lastly, stir in the cornflakes.
  5. Using teaspoons, form the cookie dough into balls of about an inch in diameter. Arrange them in the cookie sheets, approximately two inches apart as allowance for spreading. Flatten them lightly with the back of a spoon.
  6. Bake for 15-20 minutes or until the edges become light golden brown.
