The taste of summer in one small cup!

One healthy Mediterranean appetizer is bruschetta, made only with the freshest ingredients such as lycopene-rich tomatoes, basil, and heart-healthy olive oil. Traditionally, this Italian starter uses grilled white bread rubbed with garlic.  For added fiber and a more festive presentation, this recipe uses sugar-free wheat bread, formed and baked into dainty toast cups to hold the tomato filling.



Makes 6-8 servings



2 cups Ripe tomatoes, deseeded and chopped

1/4 cup Black olives, sliced into rounds

3/4 tsp Garlic, minced

2 Tbsp White onion, chopped

¼ cup Fresh basil, chopped

¼ cup Extra virgin olive oil

1 tsp Balsamic vinegar

Salt and black pepper, to season

In a bowl, mix all the ingredients together until well combined.



12 slices Sugar-free wheat bread, crusts removed

1 Tbsp Reduced-fat butter, melted

  1. Flatten bread slices with a rolling pin.
  2. Brush a muffin tray with melted butter.
  3. Gently press and fit slices of bread into cups.
  4. Bake the bread cups in a preheated 350°F oven for about ten minutes until golden brown.
  5. When done, remove from the oven and let bread cups cool. Once cooled fill each cup with the tomato filling. Serve immediately.
