A Brunch Favorite: Green Eggs and Ham

Dr. Seuss would definitely approve of this delicious brunch recipe!

Green Eggs and Ham

Makes 6 servings

1 Large or 2 small Avocados

4 Hard-boiled eggs, chopped

⅓ cup Yogurt

⅓ cup Japanese mayonnaise

¼ cup Chopped celery

2 Tbsps Chopped spring onions

2 Tbsps Crunchy garlic bits

*Juice of lemon or calamansi, to season

*Dash of curry powder

*Salt and pepper, to season

3 Plain bagels

*Butter, for spreading

6 slices Farmers ham

*Chopped spring onions, for garnish

*Spanish Paprika, to sprinkle

  1. Scoop out avocado flesh.  Mash a small portion and chop into cubes the rest of the avocados.
  2. Combine avocadoes with eggs in a mixing bowl. Mix in yogurt, Japanese mayonaise, chopped celery, and crispy garlic. 
  3. Season mixture with lemon or calamansi juice, curry powder, salt, and pepper. Mix everything together until well-combined.
  4. Chill the mixture in the refrigerator for at least an hour.
  5. Slice bagel in half crosswise then toast. Spread sliced bagels with butter then top with a slice of ham and a spoonful of the avocado mixture. 
  6. Garnish with spring onions and a sprinkle of paprika. Serve immediately.
