Bowled Cold: Cold Asian Noodle Salad

Need a light lunch? Then this Cold Asian Noodle is just what you need. Made with cooked Sapporo Pancit Bihon, cucumbers, lettuce, carrots, and your choice of meat, this noodle dish can be done in a jiffy! Don’t forget to make the sweet-savory Asian Sesame Dressing, which brings all the flavors together.



Makes 3 servings


150g Sapporo Pancit Bihon
1 cup Roasted chicken or pork barbecue, diced small
1 cup Julienned carrots
½ Unpeeled cucumber, thinly sliced into half moons
¼ head Iceberg lettuce, thinly sliced



2-4 Tbsps Rice vinegar
2 Tbsps Light soy sauce
2 tsps Sugar
2 tsps Sesame oil
1 tsp Ground sesame seeds


1. Prepare a large pot of water and bring to a boil. Put in Sapporo Pancit Bihon and cook until noodles are soft, about five minutes. Pour noodles into a colander to drain. Set aside to cool.
2. In a bowl, combine all of the Asian Sesame Dressing ingredients and mix until sugar is dissolved.
3. Pour the dressing into the bowl of Sapporo Pancit Bihon and toss. Transfer noodles to a serving bowl then top with carrots, cucumber, lettuce, and diced meat. Chill until ready to serve.
