Tuna Patties with Mango Salsa
Makes 4-6 servings

2 Tbsps Canola oil

1 Medium onion, minced

2 cloves Garlic, minced

1 stalk Celery, minced

½ cup Minced carrots

2 cans Tuna flakes in brine, well-drained

¼ tsp Cumin powder (optional) Salt

⅛ tsp Ground black pepper

2-3 Tbsps Fine breadcrumbs

2 Eggs, beaten

  • Cooking oil for frying

  1. Heat cooking oil in a frying pan over low heat. Sauté onions until soft, about three minutes. Next add garlic and celery, then cook for another two minutes.
  2. Add carrots and cook over low heat for 2-3 minutes, until all the vegetables are soft. Remove to a bowl and let cool.
  3. In a mixing bowl, empty two cans of drained tuna flakes. Season with cumin, salt, and ground black pepper. Add bread crumbs, eggs, and sautéed vegetables to the tuna. Mix well.
  4. Make uniformly sized patties by using a ¼ measuring cup to scoop the tuna mixture. Form into a ball with your hands and flatten slightly. Fry tuna patties in hot oil until golden brown on both sides.
