Beer Infused Adobo
Adobo with a side of beer = magic. We’ve gone a step further by putting it in the dish. Serve this adobo recipe with steaming hot rice and a cold glass of beer, of course.
  • 1 kilo pork kasim, adobo cut
  • 500 ml beer
  • ½ cup soy sauce
  • ½ cup vinegar
  • 1 head garlic, minced
  • ½ red onion, diced
  • 3 pcs bay leaves
  • 2 pcs siling labuyo, chopped
  • 2 tbsps cooking oil
  • Salt and pepper
  1. Make the marinade for the pork by using half of the soy sauce, half of the garlic, bay leaves, and a pinch of salt and pepper. Marinate the meat for 30 minutes.
  2. Sauté remaining garlic and onion in oil.
  3. Add siling labuyo and continue cooking for 3 minutes until the onion caramelizes.
  4. Using medium heat, add pork and brown. Stir meat every 3 minutes so as not to burn.
  5. Increase heat and add remaining soy sauce, vinegar and beer. Cover and bring to a boil.
  6. Simmer and cook until meat is tender. You may add a little water to prevent dryness.
  7. Add salt and pepper to taste.
