Bean There, Done That: Edamame Dip

This nutrient-packed dip comes together in a snap. Known for being a protein source, edamame serves as a tasty spread for your bread and the perfect partner for your health.

 

Edamame Dip

 

Makes 1 cup

 

350g Frozen edamame (or ⅔ cups cooked, removed from the pod)

⅓ cup Mascarpone cheese

1 Tbsp Grated garlic (2 big cloves)

1 Tbsp Lemon juice

¼ cup Olive oil, plus extra for finishing

1 Tbsp Parsley, minced

  • Salt and pepper to taste
  • Pita chips or crackers

 

  1. Boil water and blanch frozen edamame. Pour into a colander or strainer. When cool, remove beans from the pod.
  2. In a food processor or blender, combine the edamame beans, mascarpone, garlic, and lemon juice.
  3. Slowly add the olive oil while blending. Continue to blend until mixture is smooth and creamy.
  4. Transfer to a bowl. Add minced parsley. Season to taste with salt and pepper.
  5. Chill and serve with pita chips or crackers.
