B&B: Barbecue Chicken with Bacon, Asparagus, and Potatoes

It’s fine, we see that store-bought barbecue chicken you’re planning to serve for dinner and we’re all for it. Everyone’s entitled to a lazy day every once in a while. Here’s a fun recipe to spice it up!



Makes 4 servings


1/2 kilo Marble potatoes, rinsed

1 bunch Asparagus, trimmed and cut into segments

5 strips Bacon



1/2 cup Mayonnaise

1/4 cup Sour cream

3 tsps Dijon mustard

1 Tbsp Lemon juice

1 Tbsp Fresh tarragon, chopped

1 whole Store bought barbecued chicken, chopped into serving pieces

4 stalks Green onions, chopped


  1. In a medium saucepan, place potatoes and cover with cold water. Over high heat, bring water to a boil. Reduce the heat to medium and simmer potatoes for 10 minutes, or until tender.
  2. In a separate saucepan, place the asparagus segments and cover with cold water. Over high heat, bring water to a boil. Cook until asparagus turns bright green and becomes tender, about
  3. 1 minute.
  4. Remove potatoes and asparagus from the water and refresh under cold running water. Drain well and set aside.
  5. Meanwhile, in a frying pan, render bacon over high heat. Cook until crisp. Remove from heat, and tear into pieces.
  6. To make the creamy dressing, combine mayonnaise, sour cream, mustard, lemon juice, and tarragon in a small bowl. Taste and season with salt and pepper, and add more lemon juice if necessary.
  7. In a bowl, place potatoes, asparagus, bacon, and green onion slices. Pour dressing and toss. Top with chicken pieces or flaked chicken. Serve warm or chilled.
