You’ll Want to Eat This Baked Mayo Chicken Every Day

With the addition of McCormick spices like chili powder and cayenne pepper, this heartwarming roasted chicken recipe will hit the right spot any day you cook it. Prepare it for your family and friends then serve it up with simple sidings like steamed rice, buttered corn, and steamed vegetables. For a heartier take, roast the chicken on a bed of crumbled hash browns. The potatoes will soak up the chicken drippings making it the perfect accompaniment for this sumptuous home cooked dish. We’re sure that everyone will love to eat this tender and flavorsome baked chicken every day.


Makes 12 servings

12 Chicken legs and thighs
Juice from 5 calamansi
2 Tbsps Fish sauce
¼ tsp McCormick Black Pepper Ground
3 Chicken broth cubes (or 2 Tbsps chicken powder) dissolved in 3 Tbsps hot water
1 cup Mayonnaise
½ cup Soy sauce
½ tsp McCormick Chili Powder
½ tsp McCormick Cayenne Pepper

  1. Rinse chicken with water and drain completely. Pat chicken dry with paper towels.
  2. In a mixing bowl, combine calamansi juice, fish sauce, and McCormick Black Pepper Ground. Mix in dissolved chicken cubes. Cover bowl with cling wrap and leave chicken to marinate in the refrigerator for a few hours up to overnight.
  3. Combine mayonnaise, soy sauce, McCormick Chili Powder, and McCormick Cayenne Pepper in a mixing bowl and stir until well blended.
  4. Drain chicken marinade and discard. Dip chicken in the mayo-soy mixture one by one, coating chicken pieces completely. Arrange chicken on a baking dish, then cover tightly with foil.
  5. Bake chicken in a preheated 375°F oven for 25-30 minutes. Remove aluminum foil, brush chicken with drippings, and cook for another 15-20 minutes until chicken skin turns golden brown.
  6. Serve Baked Mayo Chicken over crumbled fried hash brown potatoes with steamed broccoli or buttered corn.
