Classic Basil Pesto

Classic Basil Pesto

Makes 5-6 servings


1 kilo Fresh basil

3-4 cloves Garlic

1 ½ – 2 cups Extra virgin olive oil

  • Salt and pepper, to season

½ cup Pine nuts, toasted

¼ – ½ cup Grated Parmesan cheese


  1. Wash basil and spin dry in a salad spinner. Separate basil leaves from stems and discard stems. In a food processor, combine basil leaves and garlic cloves. Process on low, and slowly pour in the extra virgin olive oil. Stop 2-3 times to scrape the sides with a rubber spatula. Season with salt and pepper. Mix in pine nuts and process until smooth.
  2. Transfer pesto to a bowl and mix in grated Parmesan cheese. Cover with plastic cling wrap and refrigerate until needed. Spoon into smaller bowls and serve with sliced, toasted sourdough bread.
