Asian Tofu With Stir Fried Vermicelli

Asian Tofu With Stir Fried Vermicelli

This vegetarian noodle recipe will make you forget all about meat!
Ingredients
For the marinade
  • 200g Extra firm tofu
  • 1 tbsp Light soy sauce
  • 1 tsp Ginger, grated
  • 2 tbsps Lemon juice
  • 2 tsps Sesame oil
  • 100ml Canola oil
For the noodles
  • 100g Sapporo Vermicelli Rice Noodles
  • 100g Green beans
  • 2 tsps Canola oil
  • 2 tsps Sesame oil
  • 1 Garlic clove, finely chooped
  • ½ Red chili, deseeded and finely chopped
  • 1 tsp Ginger, finely grated
  • 1 Red bell pepper, sliced
  • 1 tsp Fish sauce
  • 1 tbsp Lemon juice
  • 1 tbsp Coriander
Procedure
  1. Drain the tofu, then combine marinade ingredients. Marinate tofu for 30 minutes.
  2. Boil vermicelli. Drain and let cool in cold water.
  3. Fry tofu over medium heat until crisp. Add remaining marinade and set aside. Place the tofu on a plate with a paper towel to remove excess oil. Cover with foil to keep warm.
  4. Fry garlic, chili and ginger in canola and sesame oil over medium heat, about 1 minute. Add bell pepper and green beans and stir for a few minutes.
  5. Add noodles. Add fish sauce, lime juice, salt, and coriander. Combine and cook for 3-5 minutes more.
  6. Top with tofu and coriander. Serve warm or cold.
