What’s more comforting than an easy-to-prepare bowl of macaroni and cheese? Mixed with its cheesiness, the Spanish chorizo provides richness that adds a little indulgence to the familiar dish. And on top of all these, it can be done in just four easy steps!


Chorizo Macaroni and Cheese
Makes 6-8 servings


4-6 Chorizo de bilbao, crumbled

2 Tbsps Olive oil

2 Tbsps Butter or margarine

4 cloves Garlic, finely minced

3 Tbsps Tomato paste

1 cup All-purpose cream

1 ½ cups Whole milk

2/4 cup Processed cheese spread

1 ½ cups Grated quick melting cheese

  • Freshly ground black pepper

¼ tsp Spanish paprika

¼ tsp Chili powder

400g Elbow macaroni, cooked according to package instructions


  1. Fry the crumbled chorizo in hot oil and butter until crisp. Set chorizo aside. Drain on paper towels to remove excess oil.
  2. In the same pan, sauté the garlic until light brown. Stir in the tomato paste until incorporated.
  3. Add the cream, milk, cheese spread, grated cheese, black pepper, paprika, and chili powder. Stir to combine and simmer until thickened. Adjust to taste accordingly.
  4. Add the cooked macaroni and mix to coat. Transfer to a serving platter and top with the cooked chorizo. Serve hot.
