Anyone’s Paradise: Grilled Cajun Chicken Sandwich Recipe

Hailing from the melting pot that is the Louisiana cuisine, the Cajun cuisine is known for being rural among the people of the Creole State. But in this recipe, we’re making a grilled Cajun sandwich that will suit the taste of anyone. Plus, with healthier ingredients, we guarantee that this will also fit your lifestyle.


Grilled Cajun Chicken Sandwich
Makes 4 servings


½ kilo Skinless chicken breast fillets

2 Tbsps Soy sauce

1 Tbsp Lemon juice

1 Tbsp Cajun seasoning*

  • Olive oil for brushing the grill pan

8 slices Multigrain bread

½ cup Remoulade sauce**

4 Romaine lettuce leaves

8 Cucumber slices

8 Tomato slices



2 Tbsps Paprika

2 tsps Onion powder

2 tsps Granulated garlic

1 tsp Dried thyme leaves

1 tsp Ground black pepper

1 tsp Ground cumin


In a small bowl, combine all the ingredients. Mix well and store in an airtight container. Set aside.



1 cup Reduced-fat mayonnaise

2 Tbsps Flat-leaf parsley, chopped

¼ tsp Salt

¼ tsp Ground black pepper

1 tsp Cajun seasoning

1 Tbsp Lemon juice


In a medium bowl, whisk together all the ingredients until well-combined. Cover and chill in the refrigerator until ready to use.


  1. Flatten the chicken into ½” thickness. In a large bowl, combine the soy sauce, lemon juice, and Cajun seasoning. Place the chicken in the marinade. Cover and marinate in the refrigerator for 2 hours or overnight.
  2. When ready to cook, heat the grill pan to high. Brush the grill pan with a good amount of olive oil. Grill the chicken for four minutes on each side or until fully cooked.
  3. Assemble the sandwich: toast the multigrain bread. Spread one tablespoon of remoulade sauce on each slice of bread. Top with chicken, lettuce, cucumbers, and tomatoes. Top with other bread slice and serve immediately.
